My children love pumpkin bread! I made it Wednesday night to take to a brunch we served on Thursday and everyone loved it there too (although one of the other boys thought when I brought the loaf pans in that it was meatloaf.) It is easy to make. I just put all the ingredients in my mixer and turn it on. When it is well blended I pour into 3 greased loaf pans (each should be a little over half full) and bake at 350 for one hour. We eat it for breakfast and snacks.
1 can pumpkin
3 C sugar
1 tsp vanilla
2/3 C water
1 C oil
1/2 tsp salt
2 tsp soda
2 tsp cinnamon
4 eggs
3 C flour
1 C chopped pecans (optional)
