I really meant to take a picture of this, but during the suppertime chaos of cooking, setting the table, and washing the children, I forgot. Oh well, this recipe was so easy and really good! The leftovers reheated nicely too.
2 TBSP oil
1 1/2 lb diced chicken
1/2 green pepper diced
1 pk taco seasoning
1/2 cup water
1 cup shredded cheese
1 pkg corn muffin mix
Put oil in nonstick skillet add chicken. Cook 5 minutes or until done. Remove chicken add peppers cook until soft. Put chicken back with the peppers and add water and taco seasoning. Bring to a boil then simmer for 10 minutes. Pour into a pie plate put cheese over top. Mix corn muffin mix according to the package instructions and pour over top. Bake in a 400 degree oven for 20-25 minutes or until golden brown. One pie serves 4.
