Chocolate Chip Cookies Made With Coconut Oil



We love chocolate chip cookies.  I had bought some coconut oil to use in some different recipes and thought I would try it in chocolate chip cookies.  They were delicious!

3/4 cup coconut oil at room temperature
1 cup brown sugar
1/2 cup white sugar
1 tsp vanilla
2 eggs
1 tsp baking soda
1 tsp sea salt
2 cups of flour
2 cups chocolate chips

Mix together flour, baking soda, salt in a small bowl. Cream coconut oil and sugars.  Add in eggs and vanilla. Stir in flour mixture.  Then stir in your chocolate chips.  Bake in a 350 degree oven for 9-11 minutes.

We ended up getting 40 cookies out of one batch.

We made play dough last night and it went really well. I actually have some coconut oil so I think I will pick up some chocolate chips after church today and let the kids make these. They look great!
